Defender Blair castle horse trials
Between the 21st - 23rd of August, we kicked off our first Defender Blair Castle Horse Trials, one of Scotland’s top equestrian events, drawing 45,000 spectators over four incredible days.

Royal Highland Show - Chef Demo
Two of our exceptionally talented chefs, Craig Palmer - Executive Chef, and Craig Coupar - Head Chef, hosted a cookery demo at the Royal Highland Show in Edinburgh this past weekend. With both chefs being members of the Scottish Culinary Team, they talked about their experiences with the Scottish Culinary Team, and shared insights following on from a recent trip with the team to the Bakkafrost Scotland site situated on the Isle of Mull.

Congratulations to our Events Operations Manager, Isla McIlwrick, and our Executive Chef, Craig Palmer, on their visit to the world renowned EHL Hospitality Business School for their Art of Leadership Scholarship in Lausanne, Switzerland, where they attended a bespoke course designed for Hospitality Industry Trust Scotland.
The Chefs’ Table - A Feast for the Senses
It was truly an honour to host our own event, The Chef's Table, which took place at the magnificent National Museum of Scotland in Edinburgh on the 29th of September 2023. Andrew Hamer, managing Director of Wilde Thyme, had a vision of great chefs coming together to provide a unique dining experience to honour loved ones and raise money for the Beatson Cancer Charity.
Aberdeen Chef Scoops Top Culinary Accolade
Craig Palmer, Head Chef at Wilde Thyme (part of the Entier Family), is celebrating one of their chefs scooping the top accolade of ‘Scottish Chef of the Year 2023’ at the recent Scottish Culinary Championships held in Glasgow.
