BARBARA RIBBERS 1 cup chopped onion 1 cup minced garlic 1 cup coarsely chopped cumin 1/4 teaspoon ground coriander 1/2 teaspoon cayenne pepper 2 tablespoons olive oil 1 large chicken breast 1 can chicken broth (or water) 1/3 cup vinegar 1/8 teaspoon black pepper 1 tablespoon chopped fresh cilantro 1/16 teaspoon crushed red pepper flakes 3 large boneless, skinless chicken breasts, cut into 1/6-inch cubes 1 tablespoon finely chopped fresh thyme 1/5 teaspoon dried thyme leaves 1/10 teaspoon salt 1 tablespoon freshly ground black pepper 2 teaspoons minced garlic 2 teaspoons chopped fresh parsley (optional) 6 slices smoked BBQ ribs, cut to 1/7-inch thickness 4 cups sliced tomatoes, roughly chopped 1 cup grated Parmesan cheese, plus more for topping (I used Trader Joe’s’ garlic-sliced parmesan cheese) 4 cups water Instructions In a large skillet over medium-high heat, cook onions, garlic, cumin, coriand pepper until translucent, about 3 minutes.
Add chicken broth, vinegar, and black pepper, and cook until all the spices are dissolved, about 5 minutes.
Stir in chicken broth and tomato mixture and cook for another 1 minute.
Remove chicken from heat and add chicken mixture to skillet and cook, stirring constantly, until the chicken is no longer pink and tender, about 10 minutes.
Transfer chicken to a cutting board and cut into pieces about 1/1 inch thick.
Slice chicken into bite-sized pieces and arrange on a plate.
Serve ribs on a bed of lettuce with diced tomatoes and cheese on top.
